{Protein} Chocolate Chip Peanut Butter Bites

Hello friends, and welcome to Simple Chalk!


    Since living over here in England it's been hard for me to keep up with the clean eating that I was used to back in Utah. There just aren't a lot of healthy options in the town that I live in. One of the things I miss most about Utah is all of the fast but healthy options they have, especially in the Provo/Salt Lake City area. Almost anywhere you go there are places like Ivie Juice Bar, Cubby's, Orange Peel, Aubergine, Whole Foods, Mend Juicery, Zao Asian Cafe, etc. just to name a few of my favorites. ;)

    Anyways...enough about the delicious food that I can't have for at least another 6 months. The point is that unless you are in downtown London, it's hard to find a quick healthy bite to eat so I'm having to do a lot more creative cooking these days. That's where these little magic-balls-of-goodness come in.

     I actually got quite a big response to a picture of these that I posted on my Snapchat of all places  {Username: Saryandow} which inspired me to share this recipe with you all! I've been seeing a lot of these types of energy bites around lately so I thought I would try it out. I chose a few of my favorite recipes and did a little tweaking here and there to come up with this recipe! I already know these are going to be a weekly staple in our fridge from here on out. They are perfect for healthy snacking and they even satisfy my sweet tooth which is a major win for me since I seem to always crave something sweet.

           Ingredients:

  • 1 1/2 C. Oats
  • 1 C. Peanut Butter
  • 1 Scoop (30 g) Whey Protein
  • 1/4 C. Honey
  • 1/4 C. Mini Dark Chocolate Chips
  • 1 Tsp Cinnamon
  • 1/2 Tsp Vanilla
  • Dash of Almond Milk
Mix all together, then roll into 1 Tbs balls. Put on tin foil or parchment paper and then place in the freezer until hardened. Once they are hardened then you can store them in the fridge. For the peanut butter you can really use any kind although I would recommend all natural and no added sugar of course! I actually used half crunchy and half smooth peanut butter. You can also use pretty much any kind of protein, I used half chocolate and half vanilla and they turned out great!
